is it possible to take the filter out of the top without spilling the oil that is in the filter everywhere?
It is very possible to take out your oil filter from the top without making a mess. I do it every time.
Here's what you do... get a high quality shopping bag and open it up and place it under the area where the filter is. When you unscrew the filter... the oil should fall straight into the bag. I don't bother to turn over the filter so that the rest of the oil falls into the bag... but I guess you could if you are not confident enough. Once you remove the filter... hold the open side up... and pull the whole filter back towards the transmission fluid dipstick. Then... pull up and out of the engine bay. It's a little tight... but once you realize the path... you'll be fine in the future.

crester is totally right. maybe about 1/2 cup worth of oil spills out initially when you unscrew the filter, but if you hold the open end up, you should still be able to get the filter out without any extra oil coming out.
my recommendation (like hiroshima said) is to practice with a brand new filter so you can figure out the path it needs to go first.
So I used this tutorial tonight and it was a big help! I actually ended up taking the oil filter off from underneath the car since my car never came with a front undercarriage gaurd I just reached up there, grabbed and twisted it off with the oil pan ready underneath for the dripping oil. Filled the new filter about 3/4 full like you said and screwed it back on as tight as I could with just my hands.
One question I had is the amount of oil it should take. The owners manual said 5.7 quarts. I bought 6 quarts of mobile1 synthetic extended performance and it sucked it ALL down. I went out and bought another quart just to be sure it was full all the way and it took another one down for a total of 7 quarts. No leaks I swear. Is it possible to put too much in? How do I know when to stop? It's not like it's up to the top of the fill hole or anything like that.

Too much. Did you start the car for a few seconds before checking the level again? 6 would have been just perfect, a millimeter over the full mark.
I use the plastic bag method too takes 10 minutes to change the oil and I noticed that leveling the car is not necessary because of the drain position.

Well not much, in some instances it's just tiny things like a blown rear seal which in manual transmission cars gets really fun once the oil gets on the flywheel/ clutch assembly

usually 6 quarts is perfect...having an extra quart scares the shit out of me...i would drain some of it..be prepared to get oil down your arm...better safe than sorry right?

You could blow a seal if you have too much and it over-froths. I would drain it and make sure you have 6 in only. I have had 1/2 qt over and been ok in other cars, never had 1 full quart over.
Well, before work today I got under the front of the car (in my work clothes) and drained about a quart of oil out. Honestly, I think you could change the oil no problem without even raising the car.
After running 7k miles on whatever Lexus had put in it this mobile1 synthetic makes the engine feel like butter
